Every other week, Christophe LeRouy from Maison Pourcel opens his kitchen for an exclusive session to reveal some cooking secrets. Here are picture highlights from the “See Provence in Your Dish” class I attended back in August, starting with some of the best croissants I’ve had in Shanghai…

Today’s menu: foccacia bread, cod fish with anchovy pissaladiere and tomato coulis, and mackerel esbache with tomato jam. Let’s turn up the heat.

Preparing the mackerel.

A short description on how the mackerel escabeche with tomato jam was done: Cook onions, garlic, carrots, pepper, zucchini, pepper, thyme and laurel, add white vinegar and white wine, pour the hot mixture over filets of Mackerel, cover with heat-proof clear film and let the fish be cooked with remaining heat. Next, stew diced tomatoes with caramelized sugar, vanilla, star anise, coriander corn and cinnamons over gentle fire for 45 minutes. Plate, garnish with vegetables and herbs.

Next, cod fish with anchovy pissaladiere and tomato coulis. Make onion pissaladieres by caramelizing onions with thyme, olives, and anchovies. Make tomato coulis by cooking tomatoes in thyme, garlic, olive oil, and sugar, then emulsify with butter. The cod itself was pricked with black olives and cooked in a 120C oven for 10 minutes. Finish the presentation with herb oil.

Lastly, freshly baked foccacia bread, steamy hot and fragrant with pepper, onion, and thyme.

The cooking class at Maison Pourcel is really more like a cooking demo, since we didn’t actually get to do anything but to sit and watch. Nevertheless, this would be a fun and educational event for those interested in having a glimpse of a French kitchen in action.
