Thanks to Lindsay from Lost In Cheeseland, I had the pleasure of meeting chef Claire Damon from Des Gâteaux et du Pain earlier this week. If you’ve been reading my blog, you know that I’m a huge fan of her pastry creations, and that Des Gâteaux et du Pain is by far my most-visited pastry shop is Paris. Needless to say, I was more than excited to chat with the mastermind behind all this, and the morning got even better when she packed each of us a box of pastries to take home with. Oh boy.

Paradisi (€6.50), a tart composed of shortcrust pastry, almond biscuit, vanilla cream, fresh pomelo, and rhubarb compote flavored with timut pepper. Just another example of Claire Damon’s style – clean, fresh, not too sweet, always balanced in terms of flavors and textures. Loved this one.

Some recent tastings from Des Gâteaux et du Pain. “Pamplemousse Rosa” (€6.80), a new creation from Claire Damon, is composed of rose-flavored mousse, grapefruit segments, grapefruit jelly, and rice flour biscuit. The rose flavor is rather strong, almost too much for me if not balanced by the bitter freshness from the grapefruit. Not one of my favorites from Des Gâteaux et du Pain, but quite nice nonetheless.

“Kashmir” (€6.80), an intriguing combination of saffron, orange, and date. The bottom is a moist almond biscuit, topped with orange and saffron-flavored date compote, saffron crème brûlée, and vanilla mousse. The flavor combination is very unique and memorable indeed, though I personally am not swooned by it. That said, this could still be a fun try for those with an adventurous palate.

Some lovely recent tastings from Des Gâteaux et du Pain. Variation Citron (€6), literally a variation on the traditional lemon tart – the lemon cream has been infused with verbena (one of my favorite herbs to use in pastries!) and dotted with a few fresh raspberries. Light and refreshing.

The 2nd boutique of Des Gâteaux et du Pain is dangerously close to where I live, and I probably go there a little too often…but a pastry display as neat as this, who can resist?

So here we are, a few recent tastings.

Saint honoré mangue et caramel (€6.50), mango cream puffs paired with a caramel chantilly cream perfumed with sweet spices of vanilla, anise, and cinnamon. I had written about this pastry over a year ago after my first visit to Des Gâteaux et du Pain and while it’s just as tasty, I also noticed that the price has increased from €5.40 to €6.50. Le sigh.

Newly opened! A second boutique of Des Gâteaux et du Pain, just steps from La Pâtisserie des Rêves on rue du Bac. If you’ve read my previous posts on this pâtisserie here, here, and here, you know it’s one of my favorites in Paris. The new boutique is designed in the same style as the original on boulevard Pasteur – sleek, modern, elegant, a bit too much so for my personal preference – but anyway, let’s focus on the pastries.

‘Tis the season for chestnuts, and Claire Damon came up with her interpretation of this popular winter ingredient. Mont-Blanc Cassis (€6) from the bottom up: shortcrust pastry tart shell, black currant compote, bits of glazed chestnuts and meringue, chestnut paste, and chantilly. Pastries from Des Gâteaux et du Pain tend to be quite light, and in comparison this one is more on the sweet side. Having said that, it’s still less sugar-loaded than the traditional mont blanc, and the thin layer of sour black currant compote does well in cutting the sweetness. Like.

Some recent tastings at Des Gâteaux et Du Pain (click here and here for previous posts).

Lipstick Cerise (€5.80) attracts the eyes immediately with its intense red and brilliant shine. The bottom, a “croustillant à la cassonade”, is a crunchy mix of crushed almonds and sweet almond paste. On top, layers of light whipped cream with kirsch, stewed cherries and half-cooked Morello cherries, and vanilla cream.

Le Chou à la Rhubarbe (€4.80), a crusted choux garnished with cream and stewed rhubarbe.

Once again, back at Claire Damon’s impeccable Des Gateaux et Du Pain for a good dose of patisseries and viennoiseries.

It must be strawberry season, because all I see is fraise fraise everywhere. Tarte aux fraises à l’ eau de fleur d’oranger (€6.20) is shortcrust pastry topped with almond cream, orange flower water cream, fresh strawberries, and transparent cubes of orange flower water.

Orange flower water, a perfumed distillation of fresh orange blossoms, is traditionally used in pastries as an aromatizer for its distinctive citrus-flora scent.

At Des Gateaux et Du Pain, everything is perfect. Claire Damon is one of the very few (or the only?) female chefs with her own pastry shop in Paris, and her attention to detail is on full display in both her pastry and bread selections. There is never an overwhelming array of choices, but all – and by all I really mean all – is refined. The shop itself resembles a jewelry box, a mostly black interior with dramatic lighting illuminating the pastry gems. Elegant, and a lot more sober than a typical patisserie.

I’ve visited Des Gateaux et Du Pain a few times before but never managed to take pictures, so let’s start with the saint honoré caramel mangue (€5.40) I had on my most recent visit. What it is: sweet tart crust, mango cream, mango cream puffs, and caramel chantilly cream perfumed with sweet spices of vanilla, anise, and cinnamon. The mango cream was absolutely delightful – strong but not too intense – and worked surprisingly well with the sweet spice chantilly (I’m not a huge fan of anise in desserts, but the flavors blended rather harmoniously in this case.) And of course, it looks perfect on all angles.
