It’s been a LONG while since I last posted about La Pâtisserie des Rêves. Without further ado, here are my recent tastings from this pastry shop, starting with this pretty one: Charlotte Vanille Fruits Rouges (€7.10), raspberry bavarois, vanilla cream, red fruits compote, and lime biscuit dusted with matcha powder.

Dropped by La Pâtisserie des Rêves yesterday to try the supposedly very delicious tarte mangue-ananas, only to find out that the item is already off the shelf. What?! Devastated and unwilling to leave empty-handed, I picked up a tarte aux framboise instead.

The tarte aux framboises (€6.90) looks simple and straight forward – just a tart piled with raspberries – but it’s a bit more than that. The cross-section below shows you the layers: sweet tart shell, almond cream, rhubarb confit, vanilla cream, then fresh raspberries. It’s overall a very pleasant tart – the acidity of the raspberries and rhubarb well-balanced by the vanilla cream – though it doesn’t quite blow the mind.

Also, madeleine and brioche feuilletée.

Last time I proclaimed my love for Pâtisserie des Rêves’ madeleine (€2.20), but recently we’ve been making madeleines at work and (all bias aside!) ours are even tastier – softer, more delicate, and a more pronounced vanilla flavor. But of course, Pâtisserie des Rêves’ madeleines are still very good and perhaps one of the best you can find in Paris.

It’s been a while since I last visited  La Pâtisserie des Rêves, so I decided to drop by the shop to see what Philippe Conticini has been up to lately. Of course, I went home with a little more than I intended to buy…

First of all, tarte tatin (€5.50). I’m usually not a big fan of tarte tatin, but I heard La Pâtisserie des Rêves’s reinvention of this classic dessert is really worth a try. What differentiates Conticini’s tarte tatin is the way the apples are cooked – instead of in chunks, Conticini slices his apples paper-thin, then layer them in a mold to be cooked with vanilla syrup. The end result is a texture that literally melts in the mouth, a wonderful contrast with the flaky puff pastry and crunchy hazelnut streusel.

A beautiful gradation of color. You can see the vanilla seeds in there too.

Ultra thin layers, stacked one by one.

La Pâtisserie des Rêves, “the pastry shop of dreams”, is indeed a dreamy place. Colorful shelves, bell jar displays, and Christmas lights adorning the window year-round…cute, very cute. But what has been driving Parisians to La Pâtisserie des Rêves since its opening in 2009 is, but of course, the desserts themselves. The pastry shop is most famed for its Paris-Brest, but a few other of its deliciously crafted pastries are also worth getting fat for.
