Hironobu Tsujiguchi, the youngest pâtissier to ever win La Coupe du Monde de la Patisserie (a.k.a. the World Cup of Desserts), has a small but very chic boutique/salon in Roppongi*, Tokyo. I was only able to snap of picture of its exterior as the shop was closed when I visited last winter, but lucky me! – a friend was kind enough to bring back a box of “H Selection” for me during Chinese New Year.

*The shop is now moved to Shibuya Hikarie ShinQs B2F.

The H Selection, a special Valentine’s Day limited edition, includes 7 exquisitely crafted chocolates:

  • Cœur Framboise: red heart-shaped white chocolate with raspberry jam
  • Plaine: plain ganache made with Creole chocolate beans
  • Japonais “Yuzu”: milk ganache with tangy and aromatic yuzu
  • Hime: ganache infused with earl grey tea
  • Whisky: truffle of bitter ganache and whisky
  • Sylvain: chocolate with hazelnut praline
  • Champagne Fraises: strawberry and champagne

The above descriptions might be slightly off since I translated them from the Japanese below…but they give you an idea of what the flavors are like.


Flavors

My favorites? ALL of them. Each unique flavor – be it yuzu, earl grey, or champagne – is chosen to match a specific chocolate ganache, then blended smoothly to complement, never to overwhelm.

H Selection (¥2,100)

But if I absolutely must choose…I was particularly fond of Japonais “Yuzu” and Hime. But I also loved Sylvain…and Champagne Fraises…and Plaine…
