The 2nd boutique of Des Gâteaux et du Pain is dangerously close to where I live, and I probably go there a little too often…but a pastry display as neat as this, who can resist?

So here we are, a few recent tastings.

Saint honoré mangue et caramel (€6.50), mango cream puffs paired with a caramel chantilly cream perfumed with sweet spices of vanilla, anise, and cinnamon. I had written about this pastry over a year ago after my first visit to Des Gâteaux et du Pain and while it’s just as tasty, I also noticed that the price has increased from €5.40 to €6.50. Le sigh.

Lipstick ananas et citron vert (€6.50). As with all of Claire Damon’s “lipsticks”, it has a base of crushed almonds and sweet almond paste, but this time the dome is composed of lime mousseline, pineapple compoté, and a light cream flavored with lime zest. Loved the acidity, which was just enough to tantalize the palate but not so much so that it makes the taste buds scream.

Calisson (€6), Claire Damon’s interpretation of this traditional French pastry, is composed of layers of moist biscuit, almond paste, Sicilian orange compoté, Saint Rémy melon confit, and a mousse-like blanc manger. Very light and balanced.

On a separate degustation, I also tasted Absolu Citron (€5.80), a lemon tart with hidden meringue and Sicilian green olive oil, Cheese-Cake au Pamplemousse (€6.20), a light cheesecake with pink grapefruit cream, marmalade, and confit, as well as Kashmir (€6.50), a pastry combining flavors of saffron, orange, and date. And yes, it is now warm enough in Paris to be enjoying pastries outdoor. Carpe diem!

  1. Could you explain a little about the caps on the choux? I’m just wondering what they’re made of and how/when they’re applied. Thanks
